1 cup mixed vegetables (bell peppers, zucchini, broccoli)
1 tbsp olive oil
1 tsp garlic powder
½ tsp paprika
Salt & pepper to taste
½ lemon (for juice)
Instructions:
Cook Quinoa: Rinse quinoa under water, then cook in 1 cup of water or broth until soft (about 15 minutes). Fluff with a fork and set aside.
Grill Chicken: Season the chicken breast with garlic powder, paprika, salt, and pepper. Heat a grill pan over medium heat, add olive oil, and grill the chicken for about 5-7 minutes per side until fully cooked.
Sauté Veggies: In the same pan, add a little more olive oil and sauté the mixed vegetables until tender (about 5 minutes).
Assemble: Plate the quinoa, top with grilled chicken, and add the sautéed veggies. Squeeze fresh lemon juice over everything.
