- 2 eggs
- 125 ml (½ cup) vegetable oil
- 250 ml (1 cup) milk
- 200 g (1 cup) sugar
- 360 g (3 cups) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 100 g (⅔ cup) raisins or chocolate chips (optional)
Instructions:
- Preheat Oven: Set your oven to 180°C (360°F) or Gas Mark 4.
- Mix Wet Ingredients: In a mixing bowl, beat the eggs. Add the vegetable oil, milk, and sugar. Mix until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
- Mix Together: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. It’s okay if there are a few lumps—don’t overmix!
- Add Extras: If desired, fold in raisins or chocolate chips for added flavor.
- Prepare Muffin Tin: Line a muffin tin with paper liners or grease each cup.
- Fill Muffin Cups: Spoon the batter into each cup, filling them about ⅔ full.
- Bake: Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Start checking at the 20-minute mark, as baking times may vary.
- Cool: Once done, remove the muffins from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
