If you are wanting a special eye popping dessert for Christmas then look no further. This beautifully silky No Bake Cheesecake treat is the perfect choice.
BAILEYS AND CARAMILK CHEESECAKE
Ingredients:
BASE:
3/4 pkt of Nice Biscuits (finely crushed)
80 g of butter
FILLING:
240 g of Caramilk Chocolate
500 g Cream Cheese
1/4 Cup of castor sugar
2 tsp gelatine
1 Tbsp boiling water
30 ml Bailey Irish Cream Liquor
1 Cup of thickened cream
Method:
BASE:
Melt butter and add to crushed biscuits and mix until combined
Press into the base a lightly greased 20cm Springform pan Lined with baking paper
Chill in the refrigerator.
FOR THE FILLING:
Melt chocolate in the microwave in 30 second intervals until smooth
Soften cream cheese and add to a large bowl
Add sugar and Baileys and beat with a mixer until combined and creamy
Melt gelatine in boiling water and mix through thoroughly.
Add chocolate and whip until blended.
With clean beaters, whip cream and then fold through the cheese mixture.
Pour into springform pan and chill overnight.
Remove from pan, top with whipped cream, Caramel chocolate shavings and fresh berries of choice.
