BEEF CHOW MEIN

This is a budget meal my mother used to cook for us all the time as I was growing up. Some call it Beef Chow Mein, some call it Kai Si Min, but whatever the name, it’s just delicious and so easy to prepare.

BEEF CHOW MEIN

Ingredients:
1 Carrot Grated
1 Brown onion chopped
1 Bunch Bok Choy
1 Cup of Green Beans
1 Tbsp of Curry Powder
3 Tbsp of Soy Sauce
1 tspn sesame oil
1 Pkt Chicken Noodle Soup
2 Tbsp Sugar
1/2 Cup White Rice
1/2 Chinese Cabbage
1/2 cup fresh bean shoots
1 Litres Beef Stock/or enough to just cover
500 gm minced/ground beef.

Method:
Brown Mince in frypan with a little vegetable oil
Add Curry Powder and Onion
Add grated carrot, rice, chicken noodle soup and sugar
Add 1 litre beef stock, bring to a simmer cook 12-15 minutes.
Once rice is cooked add shredded Cabbage, beans and Bok Choy.
Cook until cabbage begins to soften.
Add Bean Shoots, soy sauce, sesame oil and mix through
Cook a further 1-2 minutes and serve.

Note: if too much liquid cook a little longer with lid off before adding cabbage.
