Ingredients:
– 1 loaf of day-old bread, cut into 1-inch cubes
– 1 cup milk
– 4 large eggs
– 1/4 cup sugar
– 1 tablespoon vanilla extract
– 2 teaspoons ground cinnamon
– 1/4 cup melted butter
– 1/2 cup brown sugar mixed with 1 teaspoon ground cinnamon (for topping)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin.
2. In a large bowl, whisk together milk, eggs, sugar, vanilla extract, and ground cinnamon.
3. Add the bread cubes to the egg mixture and stir until well coated. Let sit for 10 minutes to allow the bread to soak up the egg mixture.
4. Spoon the bread mixture evenly into the prepared muffin cups.
5. Drizzle melted butter over each muffin.
6. Mix brown sugar and cinnamon together and sprinkle generously over the top of each muffin.
7. Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and crisp.
8. Let cool slightly before serving. These are best served warm.
