Steps to Make Classic Almond and Pear Tart
Step 1: Prepare the Shortcrust Pastry
-
- Cream the Butter and Sugar:Â In a mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
- Add Wet Ingredients:Â Mix in the oil, salt, vanilla sugar, and egg, beating until fully incorporated.
- Incorporate the Dry Ingredients:Â Gradually add the cornstarch, baking powder, and flour. Mix until the dough comes together. Avoid overmixing to maintain a tender texture.
- Chill the Dough:Â Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
Step 2: Make the Almond Filling
-
- Cream the Butter and Sugar:Â In a clean bowl, cream the butter and granulated sugar until pale and fluffy.
- Add Eggs and Lemon Zest:Â Beat in the eggs, one at a time, followed by the lemon zest.
- Incorporate Dry Ingredients:Â Fold in the ground almonds and flour until the mixture is smooth and well combined.
Step 3: Assemble the Tart
-
- Roll Out the Dough: Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit your tart pan. Press it gently into the pan and trim the edges.
- Spread the Filling:Â Evenly spread the almond filling over the pastry base.
- Arrange the Pears:Â Drain the pears from the syrup and slice them thinly. Arrange the slices in a decorative pattern over the almond filling.
Step 4: Bake the Tart
-
- Bake: Place the tart in the preheated oven and bake for 35-40 minutes, or until the filling is set and golden.
- Glaze the Tart: Warm the apricot jam slightly and brush it over the tart while it’s still warm to create a shiny glaze.
- Add Toppings:Â Sprinkle sliced almonds on top for added texture and flavor.
Step 5: Serve
-
- Cool and Serve:Â Allow the tart to cool completely before dusting with powdered sugar and slicing to serve.
