Ingredients

For 4-6 servings:

  • Broccoli: 500g (17.6 oz / 2 medium heads)

  • Vegetable broth: 240ml (1 cup)
  • Cream (10%): 120ml (1/2 cup)

  • Fresh green onions: 30g (1 oz / 4-5 stalks)

  • Ground black pepper: to taste

Instructions

  1. Prepare the Vegetables
  • Wash and cut broccoli and cauliflower into florets
  • Peel and dice potatoes into 1-inch cubes
  • Peel and slice carrots
  • Dice onions finely
  • Chop green onions for garnish
  1. Start the Base
  • Heat olive oil in a large pot over medium heat
  • Sauté onions until translucent (5-7 minutes)
  • Add carrots and cook for another 3-4 minutes

  • Add potatoes, broccoli, and cauliflower to the pot
