Ingredients:

- 3 English potatoes
- 2 eggs
- 1 chopped onion
- 130 g chopped fresh spinach
- 150 g creamy ricotta or cream cheese
- 3 tablespoons of cornstarch (type Maizena)
- 100 g grated mozzarella (or other cheese of your choice)
- Salt, fine herbs, black pepper and paprika to taste
Preparation method:
Peel the potatoes, cut into small cubes and fry in a frying pan with a dash of oil.
When they start to brown, season with salt and herbs of your choice. Mix well and continue sautéing, being careful not to burn them.
In a bowl, beat the eggs with a pinch of salt and black pepper until smooth. Set aside.
Remove the golden potatoes from the pan and place in a bowl. Let cool slightly.
Meanwhile, sauté the chopped onion in a little oil. Add the chopped spinach, season with salt and paprika and sauté until wilted.Â
Pour this mixture over the potatoes. Add the ricotta (or cream cheese ), cornstarch and mix well until all the ingredients are incorporated.
Grease small molds (like cheese bread or muffin molds) and distribute portions of the dough. Bake in a preheated oven at 200 °C for 15 minutes.
After this time, spread the grated mozzarella cheese on top of each muffin and return to the oven to brown.
Serve immediately.
