Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper or lightly grease it.
2. Prepare the Dry Ingredients
In a large mixing bowl, combine the rolled oats, raisins, cranberries, chopped nuts, sesame seeds, and baking powder. Stir well to ensure the ingredients are evenly distributed.
3. Mash the Banana
In a separate bowl, mash the banana until smooth. This will act as the natural sweetener and binder for the recipe.
4. Combine the Wet Ingredients
Add the mashed banana and yogurt to the dry mixture. Mix thoroughly until all the ingredients are well incorporated. The batter should be moist but not runny.
5. Shape the Bites
Scoop small portions of the mixture (about 1½ tablespoons each) and roll them into balls or press them into flat rounds, depending on your preference. Optionally, roll them in coconut flakes for added texture and flavor.
6. Bake
Arrange the bites on the prepared baking tray, leaving a little space between each one.
Bake for 15-20 minutes or until the edges are golden brown and the bites are firm to the touch.
7. Cool and Serve
Allow the bites to cool on the tray for 5 minutes before transferring them to a wire rack. Serve warm or store for later.
