Ingredients:
* 4 slices rye bread or whole wheat bread
* 4 oz whipped cream cheese
* 1 tbsp fresh chives, finely chopped
* 1 tbsp fresh dill, finely chopped
* 1 tsp lemon zest
* Salt and freshly ground black pepper, to taste
* 6-8 slices high-quality smoked salmon (about 4 oz)
* 1/2 small red onion, thinly sliced
* 1 cup baby arugula or watercress
Instructions:
1. In a small bowl, mix the whipped cream cheese with the chopped chives, dill, and lemon zest. Season with salt and pepper to taste.
2. If desired, lightly toast the rye or whole wheat bread slices until golden brown and crispy.
3. Spread a generous layer of the cream cheese mixture on each slice of bread.
4. On two of the bread slices, arrange the smoked salmon slices evenly over the cream cheese. Top with red onion slices and a handful of arugula or watercress.
5. Place the remaining bread slices on top, cream cheese side down, to form the sandwich.
6. Cut the sandwich in half and serve immediately.
