I cubed 1/2 pound of smoked slab bacon then crisped it in the pot.. added 5 carrots, celery stalks, four cloves chopped garlic and a med onion I also cubed to the cooked bacon.. added 1/2 stick of butter and sautéed all that until the onions were translucent.. to that I added 4 pounds of bite sized cubed yellow potatoes and topped it off with chicken stock and brought it to a boil then down to simmer until the potatoes were fork tender.. I used my spoon to mash enough of the potatoes so they thickened the soup and added 4 cups heavy cream and 2 cups grated smoked Gouda and let it cook probably another 10 or 15 minutes.. I seasoned it to taste with salt and pepper with a tablespoon of ground mustard..
I know I’m terrible at conveying recipes but it’s how I made it lol.
