MIXED BERRY JELLY SLICE

This gorgeous slice would be a lovely addition to your Christmas table. It’s light and refreshing and perfect with a cuppa too.

MIXED BERRY JELLY SLICE

Ingredients:
250g Nice Biscuits, (or plain sweet biscuit of choice)
175g melted butter
395 g can sweetened condensed milk
1/2 Cup strained lemon juice (125ml)
3/4 Cup boiling water (180ml)
2 tsp gelatine powder
85g red jelly crystals (1 packet)
A selection of mixed berries or fruits of choice.

Method:
Place biscuits in a food processor and process until fine crumbs
Add to a large bowl
Melt butter in a saucepan and mix through until biscuit mix is damp.
Line a 20cm x 30cm slice tray with baking paper.
Press biscuit mix into the base of the tray
Refrigerate until chilled and set.
Next add condensed milk and lemon juice in a bowl
Add gelatine to the boiling water and stir until dissolved.
Add to the condensed milk mix and pour over your biscuit base.
Place in fridge for at least 1 hr to set.
Make up your Jelly mix using 100ml less water than normal.
Stir until jelly crystals are dissolved.
Allow to cool slightly.
Remove slice from fridge and place fruits on top.
As you pour Jelly over the fruits, ensure each piece is coated lightly.
This will help keep your fruit fresh.
Pop back in the fridge until Jelly is set.
Remove and slice.
